Swiss Chard with White Beans

1 Tbsp olive oil
1/2 red onion, sliced
1 Tbsp swiss chard, stems discarded and leaves coarsely chopped
1 Tbsp fresh lemon juice
1 can cannellini beans, drained and rinsed
1/3 cup pitted kalamata olives, sliced
3 Tbsp balsamic vinaigrette
Salt and pepper, to taste

1. In a large skillet, heat oil over medium heat.
2. Add onions, cook and stir 2-3 minutes or until onion begins to soften; remove from skillet.
3. Return skillet to medium-high heat. Add chard, lemon juice, and salt and pepper to taste. Cook and stir 3-5 minutes or just until chard wilts.
4. Transfer to a large serving platter; top with onions, beans, and olives. Drizzle with balsamic vinaigrette; toss to coat. Serve immediately.

Don't have chard? Substitute kale, collards, spinach, mustard greens, or Gibbs Road Funky Fresh mix!

Storage Tip: Fresh-from-market chard and other hearty greens are best stored in the fridge in a plastic bag. Stick a paper towel in with the greens - this will absorb extra moisture and keep them crisp and fresh longer.
