Heirloom Tomatoes, Seven-Herb Oil
2-3 large heirloom tomatoes, sliced thick
1 Tbsp minced mint
1 Tsp minced chives
1 Tsp minced cilantro
1 Tsp minced basil
1 Tsp minced thyme
1 Tsp minced oregano
1 cup olive oil
Coarse salt, to taste
Cracked black pepper, to taste
Pine nuts, optional
1. Whisk oil and herbs together. Season with salt and pepper.
2. Arrange 3 to 4 tomato slices per serving. Drizzle generously with herb oil. Season generously with herb oil. Season generously with salt and pine nuts if using.
