It’s early summer. Make mom happy and eat your greens! Lettuce mixes, arugula, chard, collards, spinach are plentiful now and packed with fiber, folates, calcium, and iron. They lower blood pressure, help manage diabetes, and guard against cancer. Tatsoi and bok choy are great for bones as they’re full of calcium, phosphorus, magnesium and vitamin K.
Cruciferous veggies like kale, radish, turnips, kohlrabi and cabbage are in season too. They’re loaded with fiber, vitamins C and E, and are a great source of inflammation and cancer-preventing phytonutrients. Fermented cabbage (think kraut, kimchi) provides valuable probiotics to maintain gut health.
The phytonutrients and antioxidants in berries and cherries make them immune-building powerhouses. They’re the farmers market sweet treat you shouldn’t pass by!
