Supporter Spotlight – Cori Persinger

Cori, one of Cultivate KC’s dedicated volunteers, grew up in Kansas City, and she LOVES being outdoors. She’s a long distance runner and climber and hopes to do her first ultramarathon this fall. She fell into gardening naturally as it was another great excuse to be outside.

She attended college in California, graduating with her undergraduate degree during the pandemic. After moving home, she found Cultivate KC when she felt desperate for something worthwhile to do outside. She continued volunteering because she loved the work and felt like she was contributing to something important.

“I think changing the way we eat and do agriculture will play an integral role in addressing our biggest health issues-and I mean health both for people on a small scale, like preventing heart disease, but also on a large scale, like mitigating climate change. I’m pretty inspired by that connection,” Cori says. She’s learned so much while volunteering for Cultivate KC and is thankful for the experience. And we are thankful for her help!

Cori’s favorite veggie is eggplant because it makes a really great meat substitute. One time after camping for a few days, they got Thai food. To this day, she still recalls the curry with eggplant she had as one of the best dishes she’s ever eaten!
